Also known as the "poor man's ribeye," the chuck eye steak is cut from the rib section of the cow that is part of the chuck primal. Though it is often lost and broken into chuck roasts, it has similar marbling and tenderness that the ribeye has, though not quite as prestigious.

Customer Love the beef! Goodness the texture of the meat and the fascia is so clearly grassfed/finished: I often grind the chuck eye steaks for burgers and love how much more easily I can remove the bands of collagen (hard to put through grinder, ordinarily in a roast I would eat) with grassfed -- everything feels more pliable with fully grassfed (is that thing or is it just my perception?). So very tasty.
