Beef Packer Brisket

The packer brisket is the whole brisket, in all it's glory. Instead of separating the flat and point out of it, we leave them together for this wondrous, gargantuan hunk of protein and fat. Some folks prefer the flat, which provides uniform cuts, and some prefer the point, for it's flavorful blend of meat and fat. Then there are some folks, whether cooking for a large crowd or just wanting to show they can, that take on the best of both worlds at once.
